Inventing Flopjack

The baby was asleep, the biggie was happily engaged – it was the perfect moment to make the flapjack that my middle son had been asking for all weekend. The baking began as all my attempts do – with a call to my mum to tell remind me how to make it. And it ended as all my attempts do – with a bit of a flop. Or flopjack, in this case.

I’ve got sticky oats stuck to the soles of my slippers. All the boys’ clothes are decorated with them too. But it tasted delicious. And I got to stand for five minutes with my arm round my four-year-old chef’s waist, watching as he sprinkled in the oats by hand, as if creating a porridge-fairy snowscene, and stirring them into the gooey loveliness, together.
